The Best Kale Greek Salad

I am going to share one of my easiest salads to make when you need a full meal or a side salad.

I love a delicious Greek salad but am allergic to red onions so I found a way to pack a lot of flavor into a Salad using ingredients that are delicious and healthy! This salad is packed with Vitamin A, C, K & Fiber from the Kale, Tomatoes, Cauliflower rice & Pomegranate seeds. Also protein from the Feta cheese & Greek Yogurt Tzatziki Dip

Jaclyn’s Kale Greek Salad

  • Kale: washed & cut with the veins removed & massaged so the lettuce is soft and now as chewy

  • Cherry tomatoes chopped into bite-sized pieces

  • Cucumber chopped into bite-sized pieces

  • Cauliflower Rice: Sautee this over the stove in a saucepan until crisp

  • pomegranate seeds

  • Feta cheese

Mix it all together!

  • Ceders Tzatziki Dip: Cucumber Garlic & Dill flavor

  • Spicy Red Pepper Feta Dip

    • In order to keep this salad low in calories, I combine 2 parts tzatziki dip to 1 part red pepper dip
